The Livingston is a wine bar restaurant offering fresh produce. It is amazing because it showcases orange wine! Elaborate, cosmopolitan-inspired tapas plates accompany the wines.
Opened in Marseille on June 23, 2021, by The Small Group—following the openings of Le Chardon in Arles and La Mercerie in Marseille—Livingston draws its identity from Richard Bach’s novel *Jonathan Livingston Seagull*. The restaurant champions an approach rooted in culinary freedom of expression, creativity, and sharing.
At its opening, the kitchen was entrusted to Chef Valentin Raffali, who led the kitchen for the first two years before moving on to pursue his career, notably after appearing on the TV show *Top Chef*.
Following a culinary residency held during the summer of 2025, Mads Christensen took over the kitchen and became chef-owner in June 2026. Originally from Denmark, he trained under Chef Erwin Lauterbach and then gained experience at several Michelin-starred restaurants. He went on to run the Mary Celeste restaurant in Paris before co-founding Bangbang in 2022.
His cuisine blends the influences of his Scandinavian training with those of Southeast Asian cuisines, emphasizing bold flavors and a contemporary approach, in keeping with the restaurant’s identity.
The menu changes with the seasons and centers on a three-course meal priced at 48 € per person. The dishes highlight ingredients prepared on-site. The wine selection places a strong emphasis on orange wines—produced using a specific winemaking method—as well as a carefully curated cellar of wines.
Livingston thus offers a welcoming and open atmosphere, where the focus is on a creative and accessible dining experience.
