This is what Simone Falco wants to convey in the recipes passed down to him by his mother near Notre-Dame du Mont. In his restaurant, decked out in blue and white - the colors of Naples and Marseille, which also evoke freshness and the sea - the Neapolitan concocts dishes with Mediterranean flavors: his famous linguine with clams, his paccheri (wide pasta) with zucchini cream and fresh tuna...
