Gérald Passedat’s cuisine is deeply rooted in his love for the Mediterranean. It offers bold, briny flavors—both vibrant and subtle—and invites you to discover more than sixty-five types of fish: some long-forgotten—such as the galinette and the chapon—and others more humble—like the girelle—… fish that alternate with shellfish, creating a sense of being immersed in the deep blue sea. His cuisine, deeply rooted in Marseille, is complemented by ingredients from the surrounding countryside and vegetables that reflect the essence of Provence. The gourmet restaurant has held three Michelin stars for over 15 years.
