Gastronomy is an integral part of sustainable travel. The food and drink on offer to visitors must therefore also be sustainable. But what is a sustainable restaurant? It is an establishment that selects organic, sustainable and local suppliers, that pays attention to food waste in the kitchen and in the dining room, that takes care to reduce its water and energy consumption and that limits the use of single-use plastic to a minimum. Some restaurateurs have chosen to be labelled to guarantee their good practices to visitors, others choose not to be labelled but are just as committed to their practices.
