Instinctive market cuisine, fruit and vegetables from local vegetable farms, artisanal fishing from the Marseilles harbor, live wines without inputs.
To our great delight, there’s a booming community of South American chefs in Marseille. David Mijoba, born in Venezuela, arrived 20 years ago and is now one of the most talented chefs on our culinary scene. He recently decided to strike out on his own, and despite all the challenges that represents, David is still committed to protecting our ecosystem. Hats off to him! His cuisine is always in movement – it searches and finds, surprising us with masterful techniques, spices and peppers from all over the world, combined with fresh produce and wild plants picked by the chef himself in the hills. A vegetable-packed cuisine infused with the sea, but much more than that.
- Marseille DurableMijoba is committed to sustainable eating and has been awarded the 3 Ecotables label. This label, a specialist in sustainable catering, focuses on sourcing, health, the menu, waste, resources, communication, ethics and social issues, and helps to anchor the establishment in continuous improvement. Mijoba's approach is to offer its customers seasonal cuisine based on organic and sustainable produce. It is part of a local and solidarity-based initiative, and is fully committed to its transition (choice of sustainable meat and fishing, locavore and short-circuit products, etc.).
